Michigan Cherry Pecan Cookies
Tidbits...The Traverse City cherry festival was always a stop on our summer vacation. Now to enjoy that sweet taste year round I keep dried cherries in my pantry. Try this icebox cookie recipe with dried cherries and pecans.
Ingredients
- Flour - 1 3/4 cups
- Baking Powder - 2 tsp.
- Salt - Pinch
- Butter - 1/2 cup
- Sugar - 1 cup
- Egg - 1
- Vaniglia - 1 tsp.
- Dried Sweet Cherries - 1/2 cup
- Pecans - 1/2 cup
Instructions
- Whisk flour, baking powder and salt
- Cream butter with vanilla
- Add sugar 1 Tbl. at a time until light and creamy.
- Add egg and continue to beat until fluffy
- Stir in cherries and pecans. Roll into ball and refrigerate for at least an hour.
- Remove from refrigerator and roll into 2 or 3 logs and wrap in saran and keep refrigerated for at least 24 hrs.
- Cut off cookies and put on parchment lined baking sheet.
Bake in hot oven 400˚ for 8-10 minutes
