Lemon Almond Cookies
Tidbits.... These delicious little cookies melt in your mouth. They are crispy outside and soft inside. The flavor is a mild touch of lemon and very light.
Ingredients
- Flour - 200 g
- Almond Flour - 170 g
- Lemon Zest - of 1 lemon
- Lemon yogurt - 125 g (1/2 cup)
- Olio di giirasole - 60 g
- Vanilla - 1 tsp.
- Sugar - 150 g
- Eggs - 2 medium
- Salt - Pinch
- Powdered Sugar - As needed
- Sugar - As needed
- Baking powder - 1 Tablespoon
Instructions
- Whisk the dry ingredients...flour, almond flour, sugar and baking powder
- Lightly beat eggs, add yogurt, oil then lemon zest.and vanilla. Add the mixture to the dry ingredients and work until dough is smooth. Form into a ball, wrap in saran and refrigerate for 2 or 3 hours.
- Put the powdered sugar and sugar on two separate plates. Cut off small pieces of dough and form into small walnut sized balls. Roll them first in regular sugar then in powdered sugar. Place them on a baking pan covered with parchment paper with space between cookies. Bake at 325˚ for 10 minutes.
