Cranberry Walnut Oat Muffins
Tidbits...These oat bran muffins are filled with dried cranberries and walnuts and are very tasty. They freeze well, take a couple at a time out for breakfast, heat them in toaster oven or microwave and enjoy them with your morning coffee.
Ingredients
- Oat Bran - 1 cup
- Oatmeal - 1 cup
- Egg Whites - 2 eggs (whites only)
- Milk - 1 cup
- Melasses - 2 Tbl.
- Brown Sugar - 100g
- Walnut Oil - 2 Tbl.
- Baking Powder - 1 Tbl.
- Walnuts - 100g
- Cranberries - 100 g
Instructions
- Whisk dry ingredients, oatbran, oatmeal, sugar and baking powder.
- Whip egg whites then add milk, melasses and oil, Stir in dry ingredients plus cranberries and walnuts. Spoon mixture into non stick muffin tin or put in muffin papers.
- Bake in preheated 350˚ oven for 15 minutes.
