Belgium Endive Cranberry Salad
Tidbits... This salad is one of my favorites. The bitter endive goes well with the sweetness of the cranberries and the balsamic vinegar. It is simple and quick to make, and complimentary to many menus.
Ingredients
- Belgium Endive - 2 or 3 heads thinly sliced
- Dried cranberries - 1/2 cup
- Slivered toasted almonds - 1 T
- Fresh mint - 1 T
- Green peppercorns - 1 tsp. freshly ground
- Cream of Balsamic Vinegar - 1 - 2 T
- Olive oil - to taste
Instructions
- Toss endive, cranberries and mint with extra virgin quality olive oil and cream of balsamic vinegar of Modena.
- Sprinkle top with toasted almonds and freshly ground green peppercorns.
