Red Pepper Salsa
Tidbits... Roasting the peppers first makes a very savory salsa.
Ingredients
- Red peppers - 2
- Ricotta - 100 g
- Extra Virgin Olive Oil - 4 tsp.
- Salt - To taste
Instructions
- Put whole peppers on a baking sheet in pre-heated 375˚ oven for 25 minutes.
- When skin starts to pull away from peppers remove from oven and place in a zip-lock bag and let them sweat until tepid. Peel, remove center core and cut into strips.
- Put in blender or food processor with the ricotta and olive oil and salt to taste.
