Kumquat Orange Marmalade
Tidbits...I use blood oranges with the kumquats because they tint the marmalade such a beautiful red/orange color. It is tangy not sweet and packed with Vitamin C.

- Chop whole kumquats and oranges including skins and let soak in water overnight .
- Cook over medium heat for 30 minutes, until slightly reduced.
- Remove and measure fruit (add 1 cup of sugar for each cup of cooked fruit.)
- Return to pan, add lemon and sure jell and boil again. Stir occasionally until fruit loosely gels.
- Transfer to sterilized jars.
