Pearl Barley Barlotti bean soup with spinach
Tidbits...Pearl barley does not require a pre-soak and cooks in less than a half hour. This creamy soup is fast to prepare and filling.
Ingredients
- Barley - 2 cups
- Barlotti Beans - 150 g pre-cooked
- Spinach - 1/2 cup chopped ( frozen or fresh)
- Bouillon - 2 cubes (4 cups broth)
- Olive oil - 1 T
- Cornstarch - 2 tsp.
Instructions
- Cook barley in 4 cups broth for 30 minutes.
- In a skillet, sauté beans and spinach on high for 5 minutes and stir into barley. Whisk in cornstarch and cook 5 more minutes. Serve hot with a drizzle of oil overtop.
