Nespole (Loquat) Jam
Tidbits...It was love at first bite! Italy has been full of constant discoveries for me. One discovery were these luscious loquats. Surely loquats are grown in other parts of America but in Michigan I never knew this fruit. They are delicious! I made this sweet dense jam that is great for breakfast with toast or yogurt. I also made a very tasty liquore that has the same sweet - tangy taste.

- Wash and clean nespole.
- Cut fruit in small pieces and cook for 15 minutes. Add sugar, lemon juice and continue to cook until the mixture becomes dense. If you like a smoother texture you can blend or run through a sieve.
- Pour in sterilized jars, turn upside down and let cool.
