Insalata di Riso Integrale e Avocado
Ingredients
- Brown Rice - 1 1/2 cups
- Vegetable broth - as needed
- Avocado - 1
- Boiled Egg - 1
- Pecans - 1/2 cup chopped
- Salsa
- Soy sauce - 3 T
- Fresh Ginger - 1 T grated
- Olive oil - 1 T
- White pepper - Freshly grated
- Zucchero di canna - 1 T
Instructions
- Cook rice, adding broth to cover as needed until tender according to package directions.
- Cut avocados and boiled eggs into small chunks, chop pecans and add to cooked, cooled rice.
- Combine salsa ingredients until well blended then stir gently into rice until well coated.
