Watermelon Pudding
Tidbits... this refreshing and delicious Sicilian recipe is a summertime dessert very popular at the celebration of Santa Rosalia in Palermo and Ferragosto. Minimal ingredients with outstanding results.
Ingredients
- Watermelon - 1 Liter (4 cups)
- Sugar - 1/4 cup (adjust to the sweetness of the melon)
- Cornstarch - 30 ml (2 T)
- Cinnamon - pinch
- Chocolate Chips or shaved chocolate - garnish
- Pistachios - garnish
- Jasmine flowers - 6 - 8 flowers
Instructions
- Cut rind off melon and discard. Run watermelon through a juicer to remove seeds. You could also use a blender then put pulp through a sieve to remove seeds.
- In a medium saucepan heat pulp and sift cornstarch gradually stirring until well dissolved. Stir in sugar, vanilla, pinch of cinnamon and lemon juice. Add jasmine flowers and cook on low heat until thickened and bright red in color about 15 /20 minutes. Remove and discard jasmine flowers.
- Pour into dessert molds or ramekins and chill until set. Garnish top with chopped pistachios and shaved dark chocolate.
