Shortbread Sandwich Cookies
Tidbits... These versatile sandwich cookies truly melt in your mouth. They can be filled with so many different flavors. The possibilities are endless. Vanilla buttercream frosting flavored with fruit puree, cocoa, caffe or marmalade are delicious choices. I make them very small (10 g each) so you can eat them in one delectable little bite.
Ingredients
- Flour - 1 cup
- Cornstarch - 1 cup
- Vanilla Bean Pod - 1 (seeds and paste)
- Butter Softened Room Temp. - 3/4 cup + 2 T
- Baking powder - 1 tsp.
- Salt - Pinch
- Powdered Sugr (Icing Sugar) - 1/2 cup
Instructions
- Whisk flour, corsnstarch, baking powder. powdered sugar and pinch of salt
- Cream softened butter with vanilla bean paste and seeds.
- Mix butter with dry ingredients until if forms a well blended dough. Form into a ball, wrap in saran and refrigerate for 1/2 hour.
- Cut off small pieces (About 10 g each ) then roll into small balls. Space on 2 baking sheets lined with parchment.
- Bake for 8-9 minutes in pre heated 275˚ F oven (180˚C) Remove when edges are very slightly golden. Do not overbake.
- Let cool. Put a generous teaspoon or pipe frosting on flat side of cookie then sandwich 2 cookies together.
