Pumpkin Loaf with Kumquat Caramel Sauce
Tidbits...Today is the International Day of the Woman. This recipe is from the "family archives" of my beautiful grandmother,Locele. The special combination of flavors and aroma bring back memories of her kitchen so many years ago!
Ingredients
- Pumpkin Loaf
- Eggs - 4
- Sugar - 1 cup
- Seed oil - 1 cup
- Fresh pumpkin - 2 cups cubed, cooked
- Flour - 2 cups
- Baking powder - 1 tsp.
- Baking soda - 1 tsp.
- Cinnamon - 1 tsp.
- Salt - 1/2 tsp.
- Walnuts - 1 cup chopped fine
- Kumquat Orange Caramel Sauce
- Kumquats - 1 cup sliced
- Orange - 1 sliced, peeled
- Orange - 1 juice
- Brown sugar - 2 T
- Honey - 2 T
- Frosting
- Cream cheese - 1 8oz. package
- Butter - 1 T softened
- Powdered sugar - 1 cup
- Vanilla - 1 tsp.
- Milk - 2 T
Instructions
- Mix oil, eggs and pumpkin until smooth. Whisk dry ingredients then add to mixture. Stir in chopped nuts.
- Bake in lightly oiled/floured plum cake pan or 9x13 inch pan at 350˚ for 50 or 60 minutes.
Kumquat Orange Caramel Sauce
Saute all ingredients in sauce pan until juice is reduced. Serve warm over pumpkin loaf with dollup of cream cheese frosting.
