Pumpkin Walnut Loaf Low Fat
Tidbits...Start the day in a perfect way with this "not too sweet" pumpkin walnut loaf low fat.
Ingredients
- Pumpkin - 1 cup cooked cubed
- Egg whites - 2
- Seed oil (Sunflower etc.) - 1/4 cup
- Plain yogurt (low fat) - 1/2 cup
- White flour - 1 cup
- Wheat flour - 3/4 cup
- Sugar - 1 cup
- Orange - 1 grated rind only
- Baking powder - 1 tsp.
- Baking soda - 1 tsp
- Cinnamon - 1 tsp.
- Nutmeg - 1 tsp.
- Salt - pinch
- Cooking spray - for baking pan
- Walnut halves - approx.. 1 cup
Instructions
- Steam cubes of pumpkin for 10 minutes until tender then puree in blender until smooth.
- Whisk dry ingredients.
- Whip egg whites until fluffy
- Add yogurt, pureed pumpkin and dry ingredients into egg whites and mix until smooth and creamy.
- Pour mixture into plumcake pan sprayed and floured. Decorate top with walnut halves.
- Bake at 375˚F foe 40 minutes. Cool.
