No Bake Granola Bars with Homemade Peanut Butter
Tidbits...A healthy energy boost any time of the day. The protein powder is optional. Toasting the peanuts and sunflower seeds enhances the nutty flavor.
Ingredients
- Rolled oats - 200 g
- Peanuts - 50 g chopped roasted
- Sunflower seeds - 50 g
- Skim milk - 125 ml
- Cocoa powder - 1 1/2 T Unsweetened
- Flaxseed oil - 1T
- Peanut Butter - 2 T
- Honey or Maple Syrup - 2T
- Whey protein powder - 2 Scoops (chocolate) optional
- Homemade Peanut Butter
- Peanuts - 1cup roasted skinned
- Honey - 2 Tbl. (Chestnut variety)
- Peanut oil - 2 Tbl. Or more as needed
- Kosher Salt
Instructions
Granola Bars
- Roast peanuts and sunflower seeds at 350˚ for 15 minutes
- Roast oatmeal flakes at 350˚ for 15 minutes.
- Mix all ingredients and press with moistened hands into parchment lined pan.
- Refrigerate for 1 hour until hardened.
Homemade Peanut Butter
- Lay peanuts on large baking sheet and roast at 350˚ for 15 minutes. Shake pan so they roast evenly.
- Put roasted peanuts in food processor with honey and salt.
- Keep pulsing until they become powdery. Drizzle oil a little at a time. Keep scraping down sides. Add enough oil until mixture is smooth and creamy.
- Keep in jar in refrigerator and bring to room temperature as needed.
