Mom's Oatmeal Cookies
Tidbits...These have become "my" cookies. They are a healthy choice and I always have them in a tin in my kitchen and/or in the freezer. Oatmeal, wheat flour, flaxseed, demerara sugar and dried fruit are a great energy source and taste good anytime of the day.
Ingredients
- Wheat flour - 1 cup
- White flour - 1 1/4 cups
- Eggs - 3
- Butter - 1 1/4 cups
- Brown Sugar - 1/2 cup
- White Sugar - 1/2 cup
- Oatmeal - 1 1/4 cups
- Baking powder - 1 tsp.
- Vanilla - 1 tsp.
- Salt - pinch
- Raisins (optional) - 1 cup
- Walnuts or pecans - 1 cup
Instructions
- Cream sugar and butter then blend in eggs and vanilla.
- Stir in dry ingredients.
- Form into balls and flatten on parchment lined cookie sheet.
- Bake 375° for 9 min. or until golden
