Cranberry Walnut Ice Box Cookies
Tidbits... These ice-box cookies were a favorite of my mom. The dough keeps well in the refrigerator and you can slice and bake just a few at a time. Hot homemade cookies ready to bake.
Ingredients
- Flour - 1 3/4 cup
- Baking powder - 2 tsp.
- Butter (no substitutes) - 1 cup
- Sugar - 1 cup
- Egg - 1
- Vanilla - 1 tsp.
- Walnuts - 1 cup chopped
- Dried Cranberries - 1 cup chopped
- Salt - pinch
Instructions
- Sift dry ingredients.
- Cream butter, sugar, vanilla and add egg. Blend well, then stir in the chopped nuts and cranberries.
- Chill mixture for two hours.
- Form log type rolls about 2 inches in diameter. Roll tightly in saran wrap and refrigerate for up to 24 hours.
- Cut in very thin slices and bake on a parchment lined baking sheet.
- Bake for 8-10 minutes in pre-heated 400° oven.
