Cornflake Cookies
Tidbits...These delicious cookies are great for breakfast, snacks or anytime! In Italy they are fondly called "Rose of the Desert" biscotti because they resemble this desert flower.
Ingredients
- Flour - 350 g
- Eggs - 2
- Sugar - 100 g
- Butter - 100 g softened
- Yeast - 1 pkg.
- Cornflakes - 150 g
- Chocolate Chips or Raisins - 100g
- Powdered sugar - optional
Instructions
- Beat the eggs with the sugar until well blended.
- Sift flour and yeast into the egg mixture a little at a time and blend with a mixer until smooth.
- Stir in the chocolate chips or raisins.
- Put cornflakes in a bowl. Roll dough into walnut sized pieces then press into the flakes on both sides until the flakes stick to the dough. Place them carefully on a parchment lined lightly buttered baking sheet.
- Bake at 375˚F for 18-20 minutes until golden.
