Coconut Macaroons
Tidbits...These decadent coconut macaroons are made with super simple ingredients that are easy to make and are a favorite at my house. The fresh coconut can be substituted with dried grated coconut with tasty results but freshly grated coconut is superior in taste and texture.
Ingredients
- Fresh coconut Grated - 1 1/2 cups
- Sugar - 1/4 cup
- Flour - 2 T
- Salt - pinch
- Eggwhites - 2 extra large eggs
- Dark Chocolate - Melted
Instructions
- Combine coconut, sugar, flour and salt.
- Whip egg whites with hand held mixer until fluffy.
- Stir whites into coconut until well blended, if the mixture is too soupy add up to 1/2 cup grated coconut.
- On a parchment lined baking pan put rounded teaspoons of mixture and bake at 350˚F about 20 minutes until golden on top.
- Let cool and dip each one in melted chocolate and place on parchment lined plate in refrigerator until chocolate hardens.
