Chocolate Zucchini Cupcakes
Tidbits...Who ever thought eating your green veggies could be this sweet and tasty! These chocolaty cupcakes are so moist and delicious and healthy too.
Ingredients
- Flour - 250 g
- Butter softened - 120 ml
- Seed oil - 120 ml
- Sugar - 100 g
- Cocoa powder - 4 T
- Grated zucchini - 200 g
- Vanilla - 1 tsp.
- Baking powder - 1 T
- Yogurt - 120 ml
- Eggs - 2
- Salt - pinch
- Topping
- Almonds - 100 g chopped
- Chocolate chips - 100 g
- Powdered Sugar - 25 g
Instructions
- Mix butter and sugar then add eggs and yogurt. Stir in dry ingredients.
- Add grated zucchini and oil and stir until well blended.
- Lightly spray muffin tin or use paper muffin cups and pour in cake batter. Sprinkle nuts and chocolate chips overtop.
- Bake for about 25 minutes in pre-heated 350° oven. Test for doneness with toothpick.
