Aunt Joanne's Chocolate Zucchini Cake
Tidbits...This recipe was given to me by my dear Aunt Joanne. I have so many sweet memories - chocolate cakes, chocolate fudge and chocolate chip cookies were always plentiful in her kitchen. This cake is delicious, very moist, dense and not too sweet. The topping adds just the right crunch. I would love to share a piece with you, Aunt Joanne, over a cup of coffee.
Ingredients
- Flour - 250g
- Butter softened - 120 ml
- Seed oil - 120ml
- Sugar - 100g
- Cocoa powder - 4T
- Grated Zucchini - 200g
- Vanilla - 1tsp.
- Baking Powder - 1T
- Yogurt (or buttermilk) - 120 ml
- Eggs - 2
- Salt - 1tsp.
- Topping
- Hazelnuts or walnuts - 100 g chopped fine
- Chocolate Chips - 100 g
- Powdered sugar - 25 g
Instructions
- Mix butter and sugar then add eggs and yogurt. Stir in dry ingredients.
- Add grated zucchini and oil and stir until well blended.
- Lightly spray a bundt pan with oil and pour in cake batter. Sprinkle nuts and chocolate chips overtop.
- Bake for 1 hour in pre-heated 350° oven.
- Cool, remove from pan and sprinkle with powdered sugar.
