Aunt Pearl's Huckleberry Pie
Tidbits...Are they huckleberries or blueberries? They say the difference is in the number and type of seeds. Nonetheless, they are kissing cousins and the taste is pretty much the same. I have fond memories of childhood summer vacations in northern Michigan. We always stopped to visit "Great" Aunt Pearl. She served us huckleberry pancakes for breakfast, big bowls of milk and huckleberries for snacks and of course her scrumptious huckleberry pie for dessert. It was the season and they were so sweet and ripe.
Ingredients
- Blueberries or Huckleberries - 3 cups
- Cornstarch - 3 T
- Water - 1/4 cup
- Lemon - 1/2 (Juice only)
- Sugar - 3/4 cup
- Butter - 2 tsp.
- Pie Shell - 1 unbaked plus strips for top
Instructions
- Mix fruit, cornstarch, sugar, lemon and water.
- Fill pie shell and dot with butter.
- Bake 425˚ for 10 minutes then turn down to 350˚ for 45 minutes more.
