Apple Mascarpone Cake
Tidbits...This cake is so moist it melts in your mouth. Mascarpone can be substituted with plain low fat yogurt.
Ingredients
- Flour - 250 g
- Dry yeast - 1 packet
- Mascarpone (or yogurt) - 250 g
- Golden Delicious Apples - 400 g (plus 2 apples for top)
- Salt - pinch
- Eggs - 4
- Sugar - 150 g
- Vanilla - 1 tsp.
- Lemon zest - 1 lemon (zest 0nly)
- Brown Sugar - as needed
Instructions
- Beat eggs sugar and salt. Beat mascarpone with 2 T egg mixture, when it becomes well blended add the rest of the egg mixture.
- Add flour, vanilla, peeled and cubed apples to mixture and pour into buttered and floured baking pan.
- Decorate top with thin slices of 2 apples and sprinkle with brown sugar.
- Bake at 375° for 1 hour.
- Let cool and sprinkle top with powdered sugar
