Angel Cake with White Chocolate and Pistachio
Tidbits....White chocolate is not a true "chocolate" because it is not made with cocoa. White chocolate does not offer the same benefits as dark chocolate. (80% or more). Good quality white chocolate is made with cocoa butter, read your label and make sure it is not made with trans-fats instead.
Ingredients
- Flour - 3/4 cup (150 g)
- Sugar - 1 1/2 cups (300 g)
- Egg Whites - 6-8 eggs
- Salt - Pinch
- Cream of Tartar - 1 tsp.
- Flavorings - 1Tbl. Rum or brandy or limoncello
- White Chocolate Sauce
- White Chocolate Bar - 125 g
- Vanilla bean - 1 whole
- Pistachios - 1 cup unsalted
- White Rum - 2 Tbl.
- Powdered Sugar - 100 g
- Whipped cream - 1/2 cup (60 ml)
Instructions
- Set oven at 375°
- Use nonstick 8 or 9 inch tube pan. LIGHTLY spray the center tube with cooking spray.
- Sift flour with ¾ cup of sugar. Set aside.
- Beat egg whites in a large bowl with the salt. After they become foamy add the cream of tartar and continue until they arrive in stiff peaks. Add the remaining sugar a couple of spoons at a time and continue beating until all of the sugar has been added.
- Add rum or flavorings and vanilla.
- Add flour mixture a couple of tablespoons at a time and mix delicately but thoroughly.
- Spoon mixture into tube pan.
- Bake 30-35 minutes
White chocolate sauce
- Use 1 bar of Lindt, Perugia, Ghiardelli, Nove (or other quality chocolate bar)
- Melt chocolate and add 1 vanilla stick for flavor over low heat in double boiler on low heat stirring constantly or in microwave. Remove vanilla.
- Whip cream and fold into white chocolate.
- Add 2 tablespoons white rum .
- Cool cake. Loosen from pan and invert on serving plate
- Drizzle warmed white chocolate sauce and sprinkle pistachios and powdered sugar.
