Lemon Ice Box Cookies
Tidbits...These cookies are great for large families or something sweet on short notice. Make a double batch and freeze them or wrap in saran and refrigerate for up to a week.

1. Sift flour, baking powder and salt into small bowl.
2. Cream butter and sugar until well blended, then add egg and mix well.
3. Add vanilla and lemon rind to butter mixture.
4. Mix in dry ingredients.
5. Cover and refrigerate for at least two hours or overnight.
6. Remove from refrigerator and divide in two parts. Roll dough into a sausage like shape and wrap tightly in saran wrap and refrigerate both rolls for another hour before baking.
7. Cut ¼ inch cookies and place on a parchment lined baking sheet.
8. Bake at 400 degrees for 8 to 10 minutes until golden.
