Purêe of Cauliflower andd Chickpeas
Tidbits...This delicious healthy soup is seasoned with turmeric and ginger then garnished with tender green onions and chickpeas.
Ingredients
- Cauliflower - 1 medium head
- Chickpeas - 250 g precooked
- Milk - 400ml
- Vegetable Bouillion Cube - 1 cube disolved in 1/4 cup hot water
- Turmeric - 2 tsp.
- Fresh Ginger - 3 cm long piece peeled then grated
- White onion - I small onion finely chopped
- Garlic clove - chopped
Instructions
- Sauté briefly the onion and garlic in a drizzle of olive oil until golden.
- Steam cauliflower until tender (about 20 minutes)
- Put cauliflower, cooked chickpeas, garlic and onions in a blender. Blend on low speed until "mushy" add room temperature milk and bullion cube dissolved in 1/4 cup water and continue to blend on medium speed until smooth and free of lumps. Add a bit more milk if needed to reach the consistency desired.
- Put blended Purêe in a non stick pan and cook on low for 15 -20 minutes to combine flavors.
- Serve hot and garnish with a few chickpeas and chopped tender onions.
