Filet Mignon with Green Peppercorn Sauce
Tidbits...Green peppercorn sauce can also be used with other beef or pork and also poultry. It has a mild peppery taste and combined with the bechamel is creamy and savory.
Ingredients
- Filet mignon - 6 steaks
- Olive oil - 1 T
- Garlic - 1 clove
- Green peppercorns - 2 T packed in brine
- Green peppercorns - 2 T whole dry
- Chives - 2 T
- Dijon mustard - 1 T
- Bechamel sauce - 1 cup
- White wine - 1 cup
- Salt - to taste
Instructions
- Heat oil in skillet with garlic clove. Remove clove when it turns golden.
- Sear steaks to desired doneness. Cover and keep warm.
- In another skillet put bechamel, mustard, chives and ground peppercorns. Stir and turn up heat then add wine and let cook another 10 minutes. Drain peppercorns from brine and add 1 -2 Tbl. to sauce. If sauce gets too thick, dilute with a Tbl. of water as needed. .
- Taste and correct for salt.
- Spoon sauce over warmed steaks with a fresh grating of dried green peppercorns.
