Belgium Endive, Pear, Walnut Salad
Tidbits...Belgium Endive has a very appealing bitter taste and is very good coupled with fruit and nuts in salad. It has a long storage life and keeps its fresh and appealing crispness.
Ingredients
- Belgium Endive - 2 Heads
- Pear - 1 peeled, cored and sliced
- Walnuts - 1/2 cup walnut halves
- Mint leaves - 3 or 4 for garnish
- Lemon - 1/2 lemon juice only
- Honey - 1 Tbl.
- Extra Virgin Olive Oil - 2 Tbl.
- Salt and White Pepper - to taste
