Belgium Endive Apricot Salad
Tidbits...The bitter taste of the endive coupled with the sweet apricots and balsamic vinegar is an interesting addition to any meal. It goes well with fish or meat.
Ingredients
- Belgium Endive - 2
- Carrot - 1 medium
- Dried apricots - 50 g
- Salt and White Pepper - To taste
- Balsamic Vinegar
- Extra Virgin Olive Oil
Instructions
- Cut Endive in 1/2 then slice on the diagonal
- Shred carrot or use spiral cutter
- Cut apricots in thin slices
- Toss with olive oil and balsamic vinegar.
- Salt and pepper to taste
