Pickled Pumpkin
Tidbits... This fresh pickled pumpkin packed in olive oil is an intense flavor that you can eat alone or with salads, veggies and red meat.
Ingredients
- Fresh pumpkin - 2 K
- Salt - 150 g
- Sugar - 150 g
- Hot red pepper
- White Vinegar - 1 liter
- Olive Oil - Enough to cover pumpkin in jars
Instructions
- Cut fresh pumpkin into thin slices.
- Mix salt, sugar, white vinegar and stir until dissolved.
- Add pumpkin to liquid and put in a large covered jar for 48 hours. Turn frequently.
- Drain liquid from pumpkin,and layer slices in jars. Add a few very spall hot peppers then cover with olive oil. Close jar tightly.
