Blueberry Curd
Tidbits... This delectable curd can be used in so many ways... topping for toast or pancakes, filling for crepes, croissants or tarts. It is
tangy-sweet with a very creamy texture.

Ingredients
- Blueberries - 250 g
- Lemon juice - 60 ml
- Lemon zest - of 1 lemon
- Sugar - 100 g
- Butter softened - 4 Tbsp.
- Egg yolks - from 3 large eggs
Instructions
- Simmer blueberries with lemon juice until softened. k
- Puree and pass through a sieve.
- Add lemon zest, sugar and butter.
- Beat yolks and add to mixture.
- Simmer in a double boiler on low until sauce is thickened. Put in a jar and let cool.
- Store in refrigerator or freeze until ready to use.
