Aunt Anne's Pear Honey Nectar
Tidbits...The screen door in summertime was always unlocked. Aunt Anne offered us sandwiches and chocolate milk for lunch and afternoon snacks. I remember saltine crackers with this sweet pear honey. This generations old recipe was not really "honey" but tasted even sweeter.
Ingredients
- Pears - 2 kg
- Sugar - 300 g
- Ginger root - 2 T freshly ground
- Lemon - 4 lemons (juice only)
- Pineapple (optional) - 1 20 oz. can with juice
- Water
Instructions
- Peel and core pears and cut in small pieces.
- Marinate in sugar and lemon juice for 24 hours.
- In a large saucepan add marinated pears, pineapple, ginger and water.
- Boil until thick, stirring frequently at least 1 hour.
- Run through sieve or blender.
- Pour into hot sterilized jars and seal.
