Zucchini tuna tubes
Tidbits...An interesting twist on zucchini. They are very good and also can be re-warmed.
Ingredients
- Zucchini - 3
- Canned tuna - 1 can packed in Olive oil
- Onion - 1
- Prosciutto or bacon - 12 slices
- Egg - 1
- Garlic - 1 clove
- Parsley - 2 T chopped
- Grated parmesan - 3 T
- Bread crumbs - 3 T
- Extra virgin olive oil - 4 T
Instructions
- Wash the zucchini and trim off both ends of stems. Cut in 3 or 4 inch tubes.
- Use an apple corer and remove centers of zucchini.
- Chop zucchini centers, onion, garlic and parsley and put in a saute pan with 2 Tbl. olive oil. Cook briefly on high, then add lightly beaten egg, drained tuna, grated cheese and bread crumbs.
- Salt and pepper to taste.
- Put zucchini tubes in salted boiling water for 10 minutes. Drain on paper towels.
- Fill each zucchini tube with mixture, wrap a piece of bacon or ham around tube and secure with toothpick to keep in place.
- Put in oven-proof dish in 400° pre-heated oven for 15 minutes.
