Wild Mushroom Stuffed Squid
Tidbits...Do not be squeamish about preparing squid. The calamari is delicious when stuffed with a variety of fillings or fried. Even frozen squid is very good with a little less work.
Ingredients
- Wild mushrooms - 1 pkg. frozen
- Whole squid - 4
- Parsley - 2 T chopped
- Scallion - 1 chopped
- Garlic - 1 clove minced
- Olive oil - 4 T
- White wine - 1 cup
- Bread crumbs - 3 T
- Salt and pepper - to taste
Instructions
- Clean and discard interior of squid. Cut tentacles below eyes and discard Chop tentacles in small pieces.
- Wash squid sacks in cold running water and dry on paper toweling.
- Thaw mushrooms and chop in small pieces.
- In a large saute pan, put 2 Tbl.olive oil, mushrooms, tentacles, parsley, garlic and scallion.
- Blend mixture with breadcrumbs.
- Fill squid sacks with mixture using an espresso spoon. Do not over stuff, because they shrink when cooked. Close the end with a toothpick.
- In a saute pan, brown squid sacks on high in 2 Tbl. olive oil, add white wine then cover and turn on low. Do not let them dry out, add 1 Tbl. water as needed. Cook for 45 to 50 minutes, until tender.
