White Peach Semifreddo (with Amaretti)
Tidbits...The pastry shoppes in Italy are plentiful. Each one has their own specialty and style. With such exceptional quality and convenient prices available it is unnecessary to duplicate them at home. I was given a big basket of these sweet white peaches so made my own little cups of tasty semifreddo.
Ingredients
- White peaches - 500 g plus 1 peach
- Sugar - 100 g
- Peach or pineapple juice - 1 cup
- Lemon - 1 (juice)
- Whipped cream - 500 ml
- Amaretti - 10-12
Instructions
Blanch peaches in boiling water for a few seconds. Remove with slotted spoon, peel and remove pit. Chop in small chunks.
Cook fruit, sugar, peach juice and lemon juice. Until softened. Cool and put in blender until creamy.
Whip cream and fold into fruit mixture.
Pour into individual parfait cups layering semifreddo with amaretti crumbs or put in jelly roll pan with amaretti crumbs on
top.
Cover with saran and freeze overnight. Remove about 10-15 minutes before serving.
Decorate with fresh peach slices and sprinkle crumbled amaretti overtop.
