Veal Rolls with Caponata

Ingredients
- Veal scallopine pounded thin - 400gr
- Bufala mozzerella - 1 medium ball
- Parmesan cheese - 1/2
- Salt and pepper - To taste
- Olive oil cooking spray - For skillet
- Caponata - 2 cups
Instructions
- Lightly brown veal on both sides in skillet with cooking spray. Salt and pepper.
- On each filet put 2 Tbl. caponata with cubed mozzerella and roll up. Close with toothpick
- Lay stuffed filets on a bed of caponata and sprinkle with parmesan.
- Cook in 400˚ oven for 10 minutes until light crust forms on top and mozzerella is melted.
- Let rest before serving.
