Totani Fritti ( fried squid)
Tidbits...This recipe of totani is typical of Genoa. Totani are a type of squid not to be confused with Calamari. They are noted for their rose/violet color and are 20 to 30 cm.in length. The squid is extremely tender and delicate in flavor.

- Clean the totani. Cut the tentacles straight across above the eyes, and discard everything from eyes down. Squeezing out the small bony beak, pulpy insides and ink sac. Remove thin bone from sac. Wash under cold running water until interior is clean. Dry with paper toweling.
- Put the oil in a large skillet and when it is hot dredge the totani in flour mixture then add to hot oil.
- The deep frying only takes minutes, just until the totani is golden and evenly fried. Drain on paper toweling. Serve hot with a sprinkling of salt.
