Taralli
.Tidbits...Taralli (Tarallucci) are super savory snacks similar to a cracker, breadstick or pretzel. Very few ingredients that come together in a very tasty treat.
Ingredients
- All purpose flour - 550 grams
- Extra Virgin Olive Oil - 120 gr
- White dry wine - 200 gr
- Salt - 10 g
- Fennel seeds or hot red pepper flakes - to taste
Instructions
- Whisk flour with salt and fennel and add olive oil with a fork until crumbly, then add wine and knead for about 10 minutes until smooth. Form a ball and let rest for 30 minutes.
- Cut off small pieces (about 15 grams each) and roll them between your hands to form about 2 1/2 inch ropes. Pinch the ends together forming a ring. In a large pot bring lightly salted water to a boil. Drop a few taralli in the water without crowding them. They will drop to the bottom and when they float to the surface they are ready. Use a slotted spoon to lift them out and put them on a towel. Continue this process until all taralli are boiled. Let rest for at least 30 minutes.
- Without crowding them add a few Taralli at a time into a pot of lightly salted boiling water. They will sink to the bottom and when they float to the top they are ready. Using a slotted spoon remove them from boiling water and place them on a tea towel. Continue dropping a few at a time into the boiling water until you have boiled all of them. Let them rest at least 30 minutes more.
- Preheat static oven to 350F˚
- Bake Taralli for 35 minutes then turn the heat up to 385˚F for an additional 5-6 minutes until golden. Remove from oven and let cool.
