Sweet Pepper Gratin
Tidbits...This is a recipe typical of the Calabria region. It is an easy recipe that can be served warm or at room temperature. Cacio cavallo cheese is typical of Puglia,Campana or Sicily.
Ingredients
- Red Bell Pepper - 2
- Yellow Bell Pepper - 2
- Bread crumbs - 50 g
- Parmesan - 2 T
- Cacio Cavallo (cheese) - 2 T
- Capers - 1 T
- Oregano - 1 tsp.
- Salt and pepper - to taste
Instructions
- Clean peppers and cut into wide strips. Saute in large pan for 20 minutes on medium heat with 3 tsp. olive oil stirring frequently.
- Roughly grind day old bread. Toss crumbs with capers, oregano, cheese and 2 Tbl. olive oil.
- Mix crumbs into cooked peppers and put in oven proof serving dish.
- Grate additional cheese over top and put under broiler until lightly browned.
