Split Pea and Ham Soup
Tidbits...My mom always told me that peas are good for you but I hated them nonetheless. When I was a child I never would have believed that split pea soup would one day be my favorite. This soup is delicious.
Ingredients
- Split peas - 400 g
- Vegetable Broth - 1 liter
- White onion - 1 chopped fine
- Prosciutto or smoked ham - 2 slices slivered
- Croutons - 3 cups
- Extra Virgin Olive Oil - 3 T
- Fresh peas - 1/2 cup for garnish
Instructions
- Heat olive oil in large cooking pot and saute onion until golden. Add prosciutto and stir until well coated. Add split peas and stir to flavor. Pour broth 1/2 inch above peas and lower heat. When they start to absorb broth, keep replenishing with more broth as needed. Turn off heat when slightly undercooked. Adjust for salt. Cover and let rest.
- Line the bottom of each bowl with croutons, pour soup overtop then add 3 or 4 croutons and a spoonful of fresh peas to each bowl. Drizzle a little olive oil and serve hot.
