Spinach Christmas Pie
Tidbits...This spinach Christmas pie in a flaky crust is simply delicious and festive.
Ingredients
- Pie Crust - 2 circular ready made 9 inch
- Bacon or ham - 6 thin slices
- Grated parmesan - 1/2 cup
- Large eggs - 2
- Greek yogurt - 1.2 cup
- Ricotta - 1 cup
- Heavy Cream - 1.2 cup
- Baby spinach leaves (or frozen and chopped ) - 2 cups chopped
- Salt and pepper - to taste
- Red Pepper corns - garnish to taste
Instructions
- Cook bacon until crisp and drain on paper towel then crumble.
- Put bacon or ham with grated cheese in bottom of 1st pastry shell.
- Beat eggs and spoon blend with yogurt. ricotta and cream and pour over bacon/ham and cheese.
- Steam spinach briefly just enough to wilt leaves, (2-3 minutes) Chop spinach, salt and pepper and gently layer on top of egg mixture
- Cut Christmas tree shape into top crust without removing before baking. Place top shell over spinach layer and crimp to seal edges.
- Bake 45 minutes or until custard is firm and crust golden. Remove and cool. Remove Christmas tree from crust and decorate green spinach Christmas tree with red pepper corns.
- Let set 20 minutes before serving.
