Spaghetti with Clams
Tidbits...spaghetti with clams is synonymous with summertime at the seashore. I am lucky to live in a beautiful town that is close to places that I love. The sun is always shining and the seashore is only an hour drive, in the winter the mountains for snow skiing are an hour in the other direction and of course there is Rome, truly spectacular all times of the year which is also only an hour away.
Ingredients
- Clams in shells - 1 kg
- Spaghetti - 500 g
- Olive oil - 1/4 cyo
- Garlic - 1 clove
- White wine - 1 cup
- Parsley - 1 T
- Sea salt - 1 tsp.
- Hot red pepper - 1
- Flour - 1-2 T for cleansing clams
Instructions
- Wash clams in cold running water and put in colander and sprinkle with flour. After 5 minutes rinse well.
- In a large skillet heat 1/8 cup olive oil. garlic clove, red pepper and sea salt on high. When garlic turns golden remove cloves.
- Add clams and stir to coat. Reduce heat to medium/high and add white wine. Cover until all clams are open.
- Cook spaghetti in abundant lightly salted boiling water. When al dente drain and add to skillet with clams. Add chopped parsley.
- Turn heat up to high and keep stirring to well coat. Drizzle remaining oil overtop.
- Serve hot.
