Soy Crepes with green beans and mozzarella
Tidbits...These crepes are healthy and very tasty! Soy, wheat flour and cocoa butter.
Ingredients
- Crepes
- Eggs - 2 slightly beaten
- Soy Milk - 1 1/4 cup
- Whole wheat flour - 3/4 cup
- White flour - 2 T
- Cocoa butter - 1 T
- Salt - pinch
- Filling
- Green beans - 1 lb. steamed
- Mozzarella - 1 large ball
- Prosciutto - 2 slices cut in slivers
- Parmesan - 1/2 cup
- Scallions - 2 chopped
- Olive oil - 1 T
Instructions
- Trim ends of green beans and boil in lightly salted water until tender but not overcooked.
- Cut into 1/2 inch pieces and saute in olive oil with prosciutto and chopped scallion. When cool,add grated cheese and cubed mozzarella.
- For crepes, mix flour with salt and drizzle in milk whisking continually. Add beaten eggs and melted cocoa butter. In small crepe pan use about 1/4 cup batter per crepe.
- Fill crepes with green bean mixture and fold in half then in half again. Grate parmesan overtop.
- Place in lightly oiled baking dish. Bake for 15 minutes in 425˚ oven until golden brown.
