Skewers of Tortellini Pumpkin and Mushrooms

Ingredients
- Tortellini (mushroom) - 500 g
- Fresh pumpkin - 1 kg. cubed, cooked (approx. 36 cubes)
- Button mushrooms - 200 g
- Large fresh sage leaves - 5
- Grated parmesan - 40 g
- Salt and pepper - to taste
- Butter - 1 T
Instructions
- Boil tortellini in lightly salted water, drain and remove when al dente and set aside.
- Put cubes of pumpkin and mushrooms on a baking sheet and cook at 375° about 30 minutes until tender
- In a saute pan melt butter and add tortellini, mushrooms, pumpkin cubes and sage until well coated. Lightly salt and pepper.
- Put the pumpkin, mushrooms and tortellini on the skewers. Lay on a baking dish lined with parchment paper. Sprinkle with grated cheese and return to 400 ° oven for another 5 minutes.
