Saltimbocca alla Romana
Tidbits...Saltimbocca means "jump in the mouth" This is a traditional Roman recipe , extremely fast to assemble, simple ingredients and tasty!
Ingredients
- Slices veal scaloppine - 4
- Slices prosciutto crudo - 4
- Large fresh sage leaves - 4
- Butter - 70g
- Cup white wine - 3/4
- Salt and Pepper
Instructions
- Pound veal as thin as possible between 2 pieces of wax paper or parchment.
- Trim off any fat or nerves .
- Lay one slice of prosciutto over the veal slice.
- Attach the two slices plus the sage leaf and secure with a toothpick.
- Melt butter in saute pan on lively heat and brown on both sides about 2 minutes per side.
- Pour white wine overtop and when wine evaporates and is reduced turn off heat.
- Let rest for 5 minutes in juices.
- Salt and Pepper and Serve immediately.
