Roman Artichokes (Step by Step)
Tidbits...A trip to Rome would not be complete without Roman Artichokes. They are a specialty (during season of course) that shouldn't be missed. They are so tasty and melt in your mouth. The fried artichokes are another Roman treasure that also should be tasted.
Ingredients
- Artichokes - 4 large
- Lemon - 1 sliced
- Fresh mint - 1/2 cup
- Olive oil - 2 T
- Salt - To taste
Instructions
- Clean and snap off hard outer leaves of artichokes and cut stems to 2 inches.
- Rub surface with fresh lemon. Cut bluntly at top and remove inner choke with grapefruit spoon or knife.
- Put in water lemon bath until ready to cook.
- Put 1 cup salted water in a pan, lay artichokes, tops down, sprinkle with mint and drizzle with 1 Tbl. olive oil.
- Cover pan with parchment paper, slightly larger than opening. Put lid over parchment .
- Cook on medium heat for approximately 30 minutes until tender. Don't peek, just let them steam in the oil.
- Remove with slotted spoon. Drizzle with remaining oil and serve hot.
