Rolled Ombrina Flilet Gratin
Tidbits... Any fish filet could be used with this recipe. It is very succulent and tasty. It can be assembled an hour or two ahead of time and only takes a short time to bake when ready.
Ingredients
- Ombrina fish filet - 4
- Toasted bread crumbs - 1 cup
- chopped garlic - 2 cloves
- Medium zucchini (3) - Spiral cut 2 zucchini and thinly slice 1 zucchine lengthwise
- Fresh herbs, parsley, thyme, chives - 2 T
- Olive Oil - 2 T
- Carrot - 1 spiral cut
Instructions
- Remove skin from fish filets (this can be done easily by pouring boiling water quickly over skin and peeling it off immediately)
- Mix herbs, minced garlic and capers with breadcrumbs. Lay filet flat and lay one or two thin zucchini strips on top, fill with a large Tablespoon of herb - caper -bread crumb mixture. Roll up and press into breadcrumb mix then secure with toothpick or kitchen string.
- Spiral cut 2 zucchini and 1 carrot then steam for 5 minutes and set aside.
- In lightly oiled ovenproof dish place rolled filets and sprinkle top with any leftover herb breadcrumb mix. Bake for 20 minutes at 375˚F.
- On serving dish put spiral cut zucchini carrot nests with one fish roll-up on each. Drizzle with extra virgin olive oil and serve warm.
