Risotto with Red Pepper Salsa
Tidbits... The roasted red pepper salsa is flavorful and creamy.
Ingredients
- Arborio rice - 2 cups
- Olive oil - 1 T
- Vegetable broth - 3 cups hot
- Roasted red bell pepper - 1 sliced thin
- Red pepper salsa - 1 cup
- Parmesan - 3 T grated
Instructions
- Saute raw rice in olive oil for 5 minutes on high. Lower heat and cover with hot broth by 1/2 inch. Keep adding a ladle of hot broth as needed.
- Toss rice with red pepper salsa and grated cheese.
- Garnish with sliced roasted red sweet pepper.
