Risotto alla Milanese
Tidbits...There are several legends regarding this king of risotto. The most probable one is that its gold color was the symbol of the wealth and power of the Milanese Bourgeoisie in the 1800's.
Ingredients
- Arborio rice - 2 cups
- Broth - 1 qt.
- Prosciutto, bacon or beef marrow - 2 T
- White onion - 1 chopped
- Butter - 5 T
- Saffron - 1 pkg. (1/2 tsp.)
- Salt - To taste
- Parmesan - 1/4 cup freshly grated
Instructions
- Bring broth to a simmer on low.
- Saute marrow, or prosciutto or bacon in 3 T butter. Add chopped onion until softened and translucent. Then add raw rice and stir until well coated.
- Add hot broth one ladle at a time to rice until absorbed. Dissolve saffron in a ladle of broth and add to rice stirring constantly. Stir in cheese and remaining butter.
