Rice and Peas (Risi e Bisi)
Tidbits This is a very simple rice recipe that originates in Veneto. It is excellent in springtime when fresh peas become available. The results are exceptional with frozen peas as well.
Ingredients
- Peas (fresh or frozen) - 1 kg
- Vialone Nano rice (or arborio) - 200 g
- Bacon slices - 50 gr cut into small pieces
- Parsley - 40 g
- Olive oil - 4 Tbsp.
- Vegetable broth - 1/2 liter
- Parmigian - 80 grr. freshly grated
- Green onion - 1 chopped
- Salt and pepper - to taste
Instructions
- In a large pan saute bacon until it becomes translucent, add 2 Tbsp. olive oil and onion continuing to cook until golden. Add 2 ladles of hot broth then then peas salt and pepper to taste and stir to combine flavors
- Cook for a couple of minutes and add the rice. Stir to coat well. Add broth a little at a time as needed. When rice is tender not mushy stir in freshly grated parmesan cheese and taste for salt and pepper if needed. Drizzle a bit of olive oil overtop of each serving.
