Red Snapper with Scallions and Orange Sauce
Tidbits...this oven fish is mild and very tasty! The orange adds the right "zip"
Ingredients
- Red snapper - 2 filets 400g each
- Scallion - Chopped
- Chile peppers - 2 small Green
- Orange - 1
- White wine - 1 cup dry
- Pine nuts - 50 g
- Soncino salad - 2 cups
- Extra Virgin Olive Oil - 3T
- green pepper - Freshly ground
Instructions
- Marinate fillets in white wine with chopped scallions and sliced green pepper, salt and ground peppercorns for at least 4 hours in refrigerator.
- Drain and dry filets, then place on baking dish lined with parchment.
Top with strained scallions and peppers. Salt and freshly grind green peppercorns to taste. Sprinkle with chopped pine nuts and bake for 20 -25 minutes in 400˚F pre-heated oven. Serve with salad greens tossed with olive oil , salt, green pepper and a squeeze of fresh orange juice.
